Clean Eating: A Family Affair

The day is bright and shiny and I have to say, I think my attitude it going to match the day!! I am actually going to try to make this a quick post because I need to get my house all nice and clean so that I can get outside and enjoy the GORGEOUS 85 degree weather. Spring is in the air and it cannot get here fast enough for me!!!

So let’s talk about this weekend. It was actually fairly busy but I didn’t take many pics to document it. Sorry about that but you know, sometimes it is much more fun to just enjoy and not worry about having the camera handy.

Saturday finished up the basketball season for Camryn. Her team was really good this year but Camryn kind of struggled to keep up with many of the girls. In all fairness, she is the smallest on her team AND she is the only one who had never played before. Bless her heart, she is all arms and legs and it is quite noticeable on the court…haha. However, my baby girl got “Most Improved” for the season and she really did deserve it. She has made leaps and bounds in her ability so I was really proud of her!!

The last month or so, Lance has been on a journey to lose a few pounds. He isn’t big by any means but he realized that he could stand to be a bit lighter and leaner(for health reasons, too) but the process hasn’t been going as quickly as he wanted. The man was a beanpole in high school and up until recently could drop weight just by slightly altering his eating plan. It seems though, he may be in the mid 30′s metabolism slump as well because it has become a bit harder. After talking about our diets and health this weekend we decided to really commit to a clean lifestyle, making it a family affair!!

We aren’t going to go all crazy or anything but we are going to try to keep processed foods to a minimum. We are going to buy the majority of our clean eating foods from Costco because if both of us(plus the kids for the most part) are going to eat this way, we will go through food pretty quickly. To give an idea this will be what our staples look like:

  • Chicken breast
  • Extra lean ground turkey
  • Tilapia
  • Oats
  • Quinoa
  • Organic Eggs
  • Plain Yogurt
  • Fruits like: Berries, Bananas, apples
  • Veggies: Spinach, Asparagus, Broccoli,  Sweet Potatoes, Onion and Celery
  • Natural Peanut Butter and Almond Butter
  • Almonds and Walnuts
  • Ezekiel Bread

Obviously, there will be other items as well but these are the groceries I plan to make sure we have around at all times. I have to say, I am really excited that Lance has finally jumped on board and I am proud of him, too!!

Another aspect of the clean eating is going to be batch cooking. I don’t love that part of it but it is necessary to make sure we have success with the it. Lance leaves for work at 5:30am so obviously that does not give him time to make breakfast in the morning. Before, he would eat a bowl of cereal and a fruit flavored yogurt. Not too awful in the calorie department but the sugar was WAY too much.

Yesterday I cooked up a bunch of egg muffin cups so that he will be set for the week.  He can grab a few of those along with some Ezekiel toast topped with natural peanut butter and voila, a clean protein packed breaky!!!

These were super easy to make, too!! Basically, you just mix up everything like you were making scrambled eggs, pour them into a greased muffin tin and bake at 350 degrees for about 20 minutes!! Use whatever add-ins sound good to you!! I used an onion mix, feta cheese and some turkey.

Another thing to ensure our success: Make sure we have something we can munch on when we are feeling snacky. Obviously, fruits and veggies are good for this but sometimes you want something that feels a bit more sinful. Enter: Jamie Eason’s Cinnamon Swirl Protein Bread.

This bread in INCREDIBLE!!!!! I even used less sweetener than recommended (I don’t like to use a lot of artificial sweetener, even Truvia or Stevia) and it was still super tasty. Lance even made the comment that it would be a fantastic dessert for someone who isn’t eating clean. I must say, I agree!!

Also, if you follow the recipe linked above, also know that I didn’t add the egg whites and it turned out just fine. I somehow skipped over that ingredient when I was making them, Oops!!

Just for the record, while this is definitely something we plan to make a lifestyle there will be moments of weakness and indulgence I am sure. Overall, our goal is just to cut out as much junk(processed food) as possible and replace it with healthier options. If we can make it so that we are following an 80/20 plan, I will feel as if we have accomplished our goal!!

My New Obsession: Homemade Peanut Butter

First thing’s first y’all!!!

We have got to talk about this new obsession of mine. It might actually be unfair of me to call it that because I have only made it one time but since then, it is ALL I can think about.

Homemade peanut butter is the BOMB! And yes, I am aware that is some out of date slang I just used there. ;-)

I have seen many a blog post about making homemade peanut butter and almond butter but since they always used a food processor, of which I do not own, I figured that making it was not an option for me.

What I do own is a mini processor/chopper and I basically said, “The heck with it, I am going to give this a shot and see if it works.”

What do you know, it did!!!!

I only used about 1/4 to 1/3 cup peanuts because I didn’t know want to risk breaking my little nifty gadget. Obviously, it only made a small portion but it was the perfect serving size. It came out to about 2 TBSP of pure goodness. The best part is how warm it is fresh. It spreads so easily and was honestly just a little taste of heaven. YUM!!!

Next time I have myself a PB&J, you better believe I am using the fresh stuff!!

Wednesday Workout and Weigh In

Today was the second official weigh-in for Diet Bet.

The good news: I am losing weight consistently.

The bad news: It isn’t happening as quickly as I would like.

I am down 2.4 pounds which means that I have two weeks to finish losing another 2.8 pounds. I REFUSE to lose my $30 so I just have to buckle down and make sure I am limiting my treats. It is always the snacking that gets me!!

Workout

I met up with a non-running buddy for my exercise this morning. We covered 3 miles by alternating walking and running every .25 miles. It was a decent workout AND the weather is beautiful so that was a plus. Not to mention, I just wasn’t “feeling” an all out run today so it was nice to take it semi-easy.

After I got home, I did 15 minutes of upper body weight training and called it a day!!

After working out, I helped myself to one of my kids Kidz Z Bars.

The iced oatmeal flavor is my very favorite but this chocolate chip comes in a close 2nd. It is a good thing I can buy these in a 24 pack at Costco because we go through these in lightning speed at my house. My kids love them for breakfast and after school snacks and I love them….well, anytime!! :-)

And now, my stomach is yelling out me that it needs to be filled SO, I am off to the kitchen to whip up a nice protein, fruit and veggie filled smoothie.

A Sleepless Night

I think 2013 has decided to put me to the test already.

I have a major case of heartburn which started at about 11pm last night. That meant ZERO sleep and the feeling of someone stabbing me in my chest every 3 minutes or so. NOT fun!! See, this just goes to show why I choose to live a healthy lifestyle. Drinking, pizza, and lots of other junk does NOT do my body good.

The only thing I could stomach this morning was a yogurt and lucky for me I had a new flavor of Chobani in my fridge.

This could very possibly be my new favorite flavor!! The creamy yogurt with the banana puree in it, sooooo good!!!

Now I just have to decide if a workout is possible for me today. From past experience, (I have a long history with heartburn and GERD) it isn’t always the best idea because the acid seems to come up even more when I am overly active. Decisions, decisions. I think I probably will attempt something, even if it is just a 20 minute workout. I would love to hit up the gym later and just walk on the treadmill(on an incline of course) but I am not sure there will be an available machine to use.

Oh how I wish my husband would let me get a treadmill but I know that isn’t going to happen. Hmph!!

Something else that I am attempting to make later is a Lentil Walnut Apple Loaf from Oh She Glows. I have had this recipe pinned forever but it seems to be a little time intensive so I kept putting it off. I have plenty of time in my schedule today so I figured I would give it a shot!

I promise to post pictures only if it turns out somewhat decent. And keep your fingers crossed that my kids and husband will eat it or it looks like I will have a whole lot of leftovers!!!

No Candy Diet

The weekend has come and gone….quite quickly I might add!!

I did enjoy the extra hour we got yesterday but it would have been even better if I could have used it to sleep a little longer. No such thing happening up in this casa with two kids who decided to wake up at their same ol’ time. Ah well….I did get them in bed a little earlier than usual last night.

There isn’t much on the agenda today, expect for getting the house all nice and sparkly clean. I might take my handsome little guy out and practice taking some pictures of him a little later. I have decided to attempt taking my own pictures of the kids for Christmas cards this year. I normally use a professional but I am going to postpone family pictures until the Spring so I am going to give it a go myself. Lord, help me now!!!!

Here is the picture we used last year so if you are on my Christmas card mailing list, don’t be disappointed if it isn’t nearly this good.

Breakfast

Breakfast was pretty simple this morning. While I was at the store this weekend, I decided to pick up a packet of Better Oats.

I have had these before but it had been a long while. I remembered them being pretty good and they are super convenient so I went for it. Not to mention, they have a really short ingredient list and that is always an added bonus!!

My only complaint is how little it makes. It only filled my bowl about 1/4 of the way so next time I will use two packets instead of one. To help fill my belly up a little more, I ate a side of fruit on the side.

Frozen mango + frozen grapes= DELICIOUS!!!!

My kids discovered the greatness of frozen grapes this weekend at my MIL’s house and it is now the snack of choice around here. I have to say, they are on to something because they are G-O-O-D. This may be just what I need to keep my hand out of the kids Halloween buckets.

Speaking of……I.WILL.NOT.EAT.CANDY.TODAY!!!!! I had more than my share of it over the weekend and I am putting myself on a no candy diet starting today. Thanksgiving is just around the corner so I will refrain from stuffing myself with unnecessary junk until then ;-) !!

WORKOUT

This week will mark week 3 of Best Body Bootcamp. I am excited to get started on it because this week the strength exercises are right up my alley!

I am mostly using the plan for strength workouts though Tina does provide a detailed plan for cardio several days per week as well. This week, I have decided to change up the schedule to make it work with the times I am available to go to the gym. Strength workouts will happen on Wednesday, Friday and Sunday and I will make sure to get in two days of my own cardio the rest of the week. Doing my cardio at the gym is not always possible so I have to make the plan work for ME! That is actually what I like most about Best Body Bootcamp so far. In the weekly emails that Tina sends out, she makes sure to reiterate that you should DO WHAT YOU CAN!!!! That attitude makes it so much easier not to give up or throw in the towel in those moments where you cannot give 110%!!!

Since today was one of those “Can’t make it to the gym days” I went ahead and busted out Jillian Michael’s 30 Day Shred first thing this morning. That is always a good workout and while it is a pretty quick routine, it gets the heart rate up and me feeling nice and accomplished!!

Honored Hero Run

Hey guys!!! I have resurfaced from the depths of painting hell!!! Can I just say I am SOOOOO glad to be done with that mess. My callused hands and achy back are certainly thankful, too!!

Lance and I finished painting the house on Friday so that gave me yesterday to rest up and relax before my 5K this morning. I know, I know….it is only 3.1 miles but still, I haven’t exactly been a running fool lately so I was a tad bit nervous about how awful I was going to do. However, I decided to get all that negative stuff out of my head and just have FUN with it!!! After all, it is a run that benefits blood cancer and that was most important, not whether I whooped butt with my time.

My forever friend(since High School), Nancy agreed to do the run with me when I first mentioned it about 6 weeks ago. Bless her heart, she has a VERY busy life….two kids and a husband, just bought and remodeled a house,  plus a very demanding full time job and was able to do very little training before the race. When I say little, I basically mean none at all. She hung in there and finished only 20 seconds or so after me which was incredible because I would have been tailing wayyyyyy behind!!!

Nancy asked me if I would be interested in running a half marathon with her in December but I don’t know that I am up for that kind of training just yet. Maybe I can talk her into waiting to do one in the Spring. Remember, I am pretty much a fair weather runner….Fall and Spring only, please :-) !!

The course today was actually very easy and while my time was somewhere near 33 minutes, give or take a few seconds I know I could have gone stronger and finished closer to 30 minutes if I had wanted to. It was a very comfortable run and I didn’t feel out of breath or really tired the entire time. Still, I am glad I ran with my friend because I believe it totally makes for a better experience!

After the race was finished, my kids chowed down on some hot dogs(at 9am, yuck!!) and I helped myself to a Fuze drink in Blueberry Raspberry flavor which was super tasty and only 20 calories for the entire bottle. I will be stocking up on those for the house soon!!

There was also a local nutrition company handing out post race recovery foods like trail mix and some homemade peanut butter balls. Oh man, those things were good!!!! I didn’t think to take a picture of it as I was too busy scarfing it down but they included a recipe card with it so that I can share with you.

OATMEAL PEANUT BUTTER BALLS

  • 1/2 cup chunky peanut butter
  • 1/2 cup honey or agave syrup
  • 1 tsp vanilla extract
  • 1/4 cup dark chocolate chips
  • 3/4 cup, plain quick oats
  • 3/4 cup nonfat dry powdered milk

Directions

  • Mix the dry ingredients with the chocolate chips in a medium size bowl. Add remaining ingredients, combining well.
  • Make into one inch balls
  • Refrigerate

Serving size: 12, one inch balls

Nutrition Stats(per ball):

  • 75 calories
  • 3 grams protein
  • 11 grams carbs
  • 2 grams fat

Since I didn’t run in the t-shirt that was provided in my goody bag, I decided to sport it at home for the rest of the day. It goes perfect with my comfy pants ;-) !!

The artwork on it was actually created by a child who was going through treatment for a blood cancer. While we may have been racing for 30 or so minutes today, that is nothing compared to what so many children and adults go through on a daily basis, through the course of their treatments. They really are the Honored Heros!!!!
