It’s That Time

Hey, all you patriotic people, it’s THAT time. Time to VOTE!!!!

I have to admit, I have some butterflies in my stomach today. Isn’t it crazy to think that the path our country will be taking over the next four years is in our hands today?! That is big stuff and a responsibility not to be taken lightly.

I actually voted over a week ago and my husband and I cancelled each other out but I feel good that I did my job. And yes, Lance and I have decided for the sake of our marriage, it is best to NOT discuss politics in our house ;-) .

If your Facebook feed is anything like mine, this day will be filled with some intense opinions and will be taking a more serious tone so I thought it might be fun to lighten it up with some light-hearted humor!!

Meal Plan

How did I forget to share this again yesterday? And you know, the funny thing is, I am doing this more for me than I am for y’all. I need incentive to plan my meals each week because it makes grocery shopping SO much easier and I figure if I keep myself accountable by sharing on here, I have to stick to it!!

Monday: Spinach and Feta Turkey Burgers with sweet potato wedges

This is my plate from last night. I went sans bun and added some guacamole on top instead. It was quite delicious!!

Tuesday: Italian chicken and broccoli

Wednesday: Black Bean Quesadillas

Thursday: Smoked Sausage with shredded glazed balsamic brussel sprouts

Friday: Ham and White Beans

This or That

Hey friends!!!

I have to be honest, I just don’t have it in me to be overly creative today so I am going to take the easy but FUN route and play THIS or THAT, a survey game that I have recently seen posted by Heather and Jessie.

This or That

1. Coke or Pepsi? I’m not proud of it but I do love me some Diet Pepsi. I don’t drink them everyday but even so it is probably something I should cut out. Maybe someday.

2. Caramel Apple or Cotton Candy? Caramel Apple!!! One of my favorite Fall desserts:-)

4. Salt or Pepper? This is a hard one because I think I like both equally. I will pick salt though, just because you can bake with it. Pepper, not so much.

5. Pudding or Yogurt? Yogurt all the way!!! Greek yogurt to be exact. I love that it tastes so good but also packs a punch of protein. Perfect snack in my opinion!

6. American or Provolone Cheese? Provolone. I love a good turkey and provolone sandwich. If I am being honest though, I am not one to turn down any cheese.

7. Cookies or Brownies? Cookies!!! Call me the cookie monster but they are definitely a weakness for me!

8. Pretzels or Chips? Pretzel Crisps!!!! Buffalo Wing being my very favorite:-)

9. Cake or Pie? I am going to say cupcakes!!! Red Velvet to be exact.

10. Oatmeal or Cereal? Oh my, this is a hard one. I love both so much, I’m going to have to call it a tie.

11. Mexican or Japanese? This one is easy!!! Without a doubt, Mexican!!

 

12. Chinese or Italian? Italian. I am always up for a good bowl of pasta.

13. Surf or Turf? I don’t really love seafood or red meat but if I had to choose, I would probably go with the surf.

14. Pizza or Pasta? Another hard one!! I don’t love the way pizza makes me feel but I do love the taste so pizza is today’s winner!!

15. Mustard or Ketchup? Mustard

16. Sandwich or Wrap? Wraps!! I love a good sandwich too, but wraps are just more fun.

17. Apples or Oranges? Apples. However, I am picky about them. I only like three varieties: Pink Lady’s, Jazz and Honey Crisp

18. Strawberries or Raspberries? Strawberries when they are in season. So sweet and juicy.

 

19. Blackberries or Blueberries? Blueberries!!! I love to pop those babies in my mouth like candy. Natures Candy!!!

20. Rice or Noodles? How about Quinoa?!

21. Spicy or Mild? Spicy!! I like my food with a little kick ;-)

22. Salad or Soup? Salad in the Summer, Soup in the Winter.

23. Soup or Stew? I consider them the same thing.

24. Salted or Sweet Popcorn? Kettle Corn. I guess that means I like the sweet stuff.

25. Cauliflower or Broccoli? Broccoli. I like cauliflower, too but broccoli has a little more flavor.

26. Onion Rings or French Fries? Sweet potato fries!! So, So, So yummy!!

27. Burger or Hot Dog? Turkey Burger. Specifically, my spinach and feta turkey burgers. Oh yeahhhhh!!!

 

28. Popsicle or Ice Cream? Ice cream any day of the week!!

29. Coffee or Tea? I could never live without my morning coffee. I love the stuff.

30. Chocolate or Vanilla? Chocolate.

31. Sausage or Bacon? I have a weakness for bacon. Real bacon. I hardly ever allow myself to eat it but it has to be one of the tastiest foods to ever touch my lips. Bacon, bacon, bacon!!!!

32. Peanut butter or almond butter? Creamy natural peanut butter.

33. Salty or Sweet? I can’t choose. I like and crave them equally.

34. Fried or Scrambled Eggs? Fried….on a sandwich!!

35. Waffles or Pancakes? I don’t eat either often but when I want a splurge, I am all about some good pancakes!!

Spinach and Feta Turkey Burgers

The countdown is on. Just TWO more days until we get to celebrate the 4th of July Holiday! I am SO looking forward to it. Watching a beautiful fireworks show is one of life’s little pleasures!

I have another reason for you to celebrate this week! I am bringing you a FAN-TAS-TIC turkey burger recipe today. I would suggest making it for 4th of July to share with your party guests but these are so good you may want to eat them all yourself.

Obviously, I love it or I wouldn’t be sharing the recipe but the real seal of approval came from my husband and kids. There was little conversation at the dinner table last night because everyone was too busy making “mmmmm” sounds after each bite. My son even asked for another one. There is no better compliment than THAT!!

I’m quite disappointed in my pictures but I couldn’t find my regular camera so I had to make due with my camera phone. Add to that, my intense desire to chow down and I wasn’t a very patient photographer. I PROMISE, these pictures do this meal no justice!!

Spinach and Feta Turkey Burgers

Ingredients

  • 1 package extra lean ground turkey breast(slightly over a pound)
  • 2 cups fresh spinach, chopped
  • 1/3 cup crumbled feta cheese
  • 1 Tbsp Worcestershire
  • 1 tsp minced garlic
  • 1 Tbsp Webster’s Gourmet Burger Seasoning
  • 1 egg

Directions

  • Heat grill to medium-high heat and lightly oil grill grates
  • While grill is heating, combine ground turkey with Worcestershire, garlic, burger seasoning and egg. Mix well.
  • Add in chopped spinach and feta cheese and incorporate well, mixing with hands.
  • Form into 4-5 patties depending on desired size
  • Grill burgers on preheated grill, cooking 15-20 minutes or until burgers are done.

Optional: The addition of sautéed onions will most definitely take this burger to another level(if that is even possible). Slice a red onion, and saute in a small amount of olive oil until onions are soft and beginning to caramelize. Place on top of cooked burger. HEAVEN.ON.A.BUN!!!

Spinach and Feta. I could eat this as is…..but then I wouldn’t get to experience the incredible taste in my burger!!

You don’t have to worry about bland tasting turkey with this seasoning. It adds great flavor without being overwhelming.

Grill Time!!

Time to assemble and devour!!! Oh yes!!!

Every time we grill up turkey burgers, I get a bit nervous that they will be a big flop. I don’t worry so much about liking them myself but the true test is whether others will feel the same way. I would be willing to bet money that this burger would go over just as well as a “real, aka beef” burger, just as long as the one consuming it doesn’t despise spinach or feta cheese. And even then, you might be surprised ;-) !

Workout of the Day

Yesterday was WOD #4 of the Cross Fit Home Version program and it was a scheduled rest day. I took advantage of that for sure ;-)

Even though I only got about 5 hours of sleep last night(Thanks, Magic Mike!!) I still woke up feeling pretty refreshed and ready to get my workout on.

Day WOD #5 looked like this:

2 rounds of:

run 400 meters

50 lunges(25 each leg)

I didn’t track my time because it didn’t tell me to but I did note that I  ran the 400 meters in about 2:30 seconds and that was mostly uphill.

Afterwards, I wanted to get in a bit of extra cardio and thought pushing both kids(close to 100 pounds) in the jogging stroller would be a great workout. They had another idea though. They wanted to run with me. I wasn’t jumping up and down over the idea because I figured they would tire out pretty quickly but I was in for a surprise. Especially from my daughter. That girl is a natural runner!! We circled the neighborhood once which is right at one mile and finished in just under 14 minutes.  I know that isn’t a wonderful time but considering my kids are 4 and 6(and there was some walking involved), I was quite impressed with their ability. I may have just found some new running buddies :-)

Rounding the corner to the finish line! Do you love my shirtless son? He wanted to be like “the runner guy” he saw in our neighborhood. Ha!!
