WIAW #20

Another Wednesday and another glance into what I ate throughout yesterday!!

You would think by now I would be used to taking photos of my food but I cannot tell you how many times I had to stop mid-bite, put the food down and grab the camera.

All I know is I couldn’t get my food down fast enough yesterday. Why?

1. It was REALLY good!

2. HIIT first thing in the morning apparently leaves me starving the rest of the day!!!

I cannot tell you how many times I have told my husband (and myself) that I am going to get up early and head to the gym before he goes to work. Just as many times as I have told him it is going to happen, is exactly how many times it hasn’t happened. I just haven’t been able to drag myself out of bed at 5am and head to the gym.

Until today that is!!! One of my excuses was that I was scared to workout all by my lonesome in the gym while it was still dark outside. No worries there. The place was packed!!! Seriously, I had NO idea how many people prefer to get up while the rest of the world is sleeping and sweat it out. It felt pretty awesome to be included in that group!!!

Now I am not going to get all crazy and do it every day of the week or anything. This girl is going to have to work her way up to that!! For now, I will stick with one early am session and gradually increase it to two. Two is my limit though. I need my sleep!!

Alrighty now……..moving on to that food I couldn’t get enough of!!!

Breakfast: This happened pretty early in the morning. I got home from the gym at 6am, had my coffee and then wolfed down this delicious bowl of oats by 6:30. So good!!

Snack: I am trying to back off of the processed foods but I kind of failed at that yesterday. I couldn’t help myself. But hey, they are called Skinny Sticks. I did practice self control. I had a handful and was done. ;-)

Lunch: Simple but tasty. I wasn’t in the mood to cook and I didn’t have anything that was readily available(without cooking) so I settled on a yogurt bowl and carrots with a side of hummus.

Snack: Pink Lady apple sprinkled with cinnamon and a Babybel cheese. Oh my, these little things are AMAZING!!! Thank goodness I got a huge bag of them from Costco. Sadly, my kids like them just as much as I do so even though it was a pretty big bag, I don’t see them lasting long around here long.

Dinner: I saved the BEST for LAST!!! I stuck two sirloin steaks, a bell pepper and onion in the crock pot along with fajita seasoning earlier in the day. 6 hours later and I had the most delicious beef fajitas ever. Gosh, I LOVE this recipe. If you are a fan of fajitas, I highly recommend giving these a shot!!

I promise, it tastes sooooo much better than it looks. The lighting was awful when I took this picture!!!

And now, it is time to get my boy off to school and hit the gym again. I am meeting my friend, Brandi for lunch and we are having some Southern style home cookin’. It may not be the best for my waist but I know my mouth won’t complain!!!

I used to eat them whole but since my kids require theirs to be sliced, I have started doing it for myself as well.

Sleep and Shots

It is going to be a good day, people!!! You know why? I finally feel somewhat human again!!

We had big plans up in our house yesterday….you know, paint a good portion of the rest of the house. Well, that didn’t even come close to happening.

Lance saw how pathetic I was yesterday morning and deemed it an official “rest day”. Thank goodness because I needed it!!

A sure fire way to test whether I truly feel bad is to watch whether I eat or not. When I am really sick, food just does not sound good and that hardly ever happens. For that reason, I am going to skip a week of participating in What I Ate Wednesday because honestly, there just wasn’t much happening where that was concerned. :-(

Coffee didn’t even do it for me yesterday. Nope, didn’t even give me an ounce of extra energy. It was good, though….and made my throat feel somewhat better.

When my coffee didn’t help me out any, I knew what I had to do. Sleep. And boy, did I!!! Just like a baby!!

After getting my daughter off to school, I came home and hit the sack for a good 2.5 hours. After getting up to hang with my boys and attempting to eat some soup, I then went back to sleep for another 2 hours. Sheesh, you would think all that sleep was the magic cure but nope, I was still running a fever and felt like poop. I finally sucked it up and made my way to the doctor. Why I didn’t do this earlier in the day is beyond me. Not my brightest moment!!!

The doctor confirmed that I had a sinus infection and bulging eardrums. Nice. A steroid shot in the booty and an antibiotic prescription and I was out the door. I have seriously never been more excited to show my butt to someone ;-) !!

Within 45 minutes of getting the steroid shot, I started to notice a difference, thank goodness.

Since I was feeling better(compared to earlier in the day) and my stomach was grumbling from lack of food, I got in the kitchen and whipped up a delicious “breakfast for dinner”. Oh my, it was soooo delicious and my tummy was ever thankful to have some food in it.

Roasted sweet and red potatoes, fry style, scrambled eggs with onion and spinach and a couple pieces of turkey bacon seemed like a gourmet meal. I am always a fan of breakfast for dinner though, so it is no surprise that I enjoyed it so much. I have seen Tina at Carrots N Cake add nut butter to her sweet potato fries so I decided to give it a whirl. Super awesome!! Give it a try if you haven’t already.

Today will be the day for making up lost ground in the painting department. I hope we are able to get a large portion of it covered because I hate being behind. You don’t realize just how much you have to cover until you start painting it. Times like this, I really miss my smaller house.

As for a workout out….yeah, don’t look for one of those today. I am definitely feeling better but I have to take a couple days off….Dr. orders!!!

However, I do have some fun workout info to share. Monday night, I made a last minute fitness decision that I am pumped about. I promise to share that with you tomorrow. Right now, it is time for me to get off the computer and start getting busy!!

WIAW #17, Restaurant Style

Goooood Morning!!!

Another Wednesday has arrived and you know what that means!! I have lots of good food stuff to share with you.

This week I am changing it up just a little bit. Rather than sharing a full day of meals with you, I am going to share ONE meal, instead.

My husband has a customer who is opening a new restaurant and last night was Friends and Family night, which is basically the final run for the cooks and servers before opening to the public.

When we go to these events I always keep my expectations pretty low but I have to say, I was pretty much blown away with the awesome service and even better food!!!

The name of the restaurant is BFF, located in Arlington, Texas and it is a fusion of an Asian Bistro and French Bakery. I wasn’t sure what to think of the concept when my husband first told me about it but after eating there, all I can say is, it works!!!

We were all pretty hungry when we arrived so we started out with a couple appetizers.

Crab Rangoon and coconut crusted shrimp were our first picks. Not one bite of it was bad but the shrimp, oh man, it was incredible!!!

(Sorry for the dark pictures but the restaurant had pretty low lighting and while the ambiance was great, it doesn’t work so well for photos)

Liam and I both ordered a California roll as our entree. Like mother, like son……

Out of these 16 pieces of sushi, I got all of THREE!!! My son devoured his roll, stuffing it into his mouth as quickly as it would go down. My daughter stole the other pieces, little stinker!!! I wasn’t about to tell her no because she has tried sushi multiple times and was never a big fan….until now obviously!!

As much as I loved every bite of Asian food that passed my lips, I would be lying if I said I didn’t want to go straight to dessert when we first arrived. There were so many options…… from cheesecake, red velvet cake, multiple pastries and creme brulee that it was pretty overwhelming. I would have been happy taste testing it all!!!

Since I was sharing with Lance, I let him help me make the decision. I am pleased to say that we went with the creme brulee. Oh my……this was a taste of heaven!!

The only negative thing I can say about this place is that there was no wheelbarrow handy to wheel us out :-) !!

As a thank you for coming out to support the event, they also sent us home with goodie bags filled with pastries and bread. WHAT?! This is totally the best goody bag I have ever received!!!

One of these WILL be my breakfast this morning. The hard part is just deciding which one. Ahh….decisions!!!

What I Ate Wednesday #16

Welcome to another week of What I Ate Wednesday!!

Normally I am a gal who likes a little variety in her life(meals especially) but judging from yesterdays food, you wouldn’t know it!! What can I say, if I am eating the same thing multiple times per day, it must be good!! That, or I am running low on groceries!! I can say that my pantry is pretty well socked right now so yep, I was just digging the food!!

I am loving the WIAW theme for the month of October for two reasons!!

  1. It is all about the fun and healthy Halloween treats(of which I ate lots yesterday!!)
  2. PINK for Breast Cancer Awareness

My mom is a Breast Cancer survivor so I am always happy to see awareness brought to the cause!! So many of us have been or will be affected by Breast Cancer and I feel it is so important to be educated about the disease as well as helping to find a cure and care for those who have it!! Thanks, Jenn!!!

Okie Dokie, let’s get to talking about yesterdays meals!!

WIAW #15

Breakfast- If you checked out my blog yesterday, then you already know about the slice of goodness that was breakfast. Spinach, onion and feta crust-less quiche. So delicious!!

Snack #1- The skinny chocolate chip pumpkin cookies that I made on Monday didn’t stand a chance around me yesterday. I tried to keep them hidden….out of site out of mind but yeah, it didn’t work so well. I went ahead and helped myself to two of them for my morning snack.

Lunch- I had one piece of quiche leftover after breakfast and I felt bad letting it sit in the fridge all by its lonesome……Soooooo, I ate it!!! I added a piece of Ezekiel bread topped with peanut butter and jelly and had a more than acceptable “breakfast for lunch” meal!!

 Snack #2- Remember how I said my meals were really repetitive today. Yeahhhh, that includes snacks as well.

Dinner- Alright, I finally changed it up at dinner time!!! While I enjoyed every bite I ate earlier in the day, my taste buds were more than ready for some variety. Grilled chicken breasts, quinoa with corn and peas and green beans. It was simple and it was G-O-O-D!!

I love grilling nights!! Mostly because it means that Lance is handling the cooking of the meat which is far from my favorite thing to do. Minimal mess in the kitchen is pretty nice, too!!!

I would love to say that my eating ended with that meal but that would be a big fat LIE!!! Like I tell my kids, it is always better to tell the truth….

Truth: I had ONE more pumpkin cookie after dinner.  Someone hide the darn cookies because obviously I cannot have just one……or two. Five people, I had FIVE!!!!!

I have to wish a special HAPPY BIRTHDAY to my extra special best friend, Stephenie!! The type of friendship we have is hard to come by but I am lucky enough to be gifted with it everyday. I only wish I could be in Baton Rouge to celebrate with her. I love you, my friend!!!

WIAW #15 = Semi Couch to 5K

Hi y’all!!!

Let’s get started with talk about yesterday’s workout.

  • Non-Existent. Oops!!

I had every intention of getting in a strength training workout but I ended up skipping. It isn’t my proudest moment but I am not going to sit here and make excuses. I was lazy. There is no other way to put it.

I guess it’s a good thing I will be heading out for Day 2 of the “Semi-Couch to 5K” I am doing to get race ready. I am calling it “Semi C25K” because my fitness level is beyond the ever popular C25K plans out there. They definitely work for very beginner runners  and I know this because I was one of them several years ago. I went from having a newborn baby to running a 5K with a fairly decent time in just under a few months. For new runners, I highly recommend the Couch to 5K program to get you out the door and hitting the pavement.

But like I said, I am a bit beyond that now and can run a couple miles before my asthma starts to kick in and makes me feel like I am getting kicked in the chest. Ha!! I am actually kidding, it isn’t that bad but the two mile mark is pretty hard to push past without a walking break at this point. I know the steep hills in my neighborhood are doing me no favors!!!

After digging around on runner forums and googling 5K plans, this is what I have come up with.

What I Ate Wednesday

Since I just started counting calories, I had to make sure I didn’t get too heavy handed with my meals today. Normally when I start tracking my food, by the 2nd day, I am starving and wanting everything that I shouldn’t have. Even though I did have a couple rumbles in my tummy throughout the day, I think I did a pretty good job at making choices that were filling but also allowed me to feel like I wasn’t “dieting”.

Breakfast was a bowl of peanut butter Puffins and 1/2 sliced banana. I also had a delicious cup of pumpkin spice coffee.

Morning Snack: A sliced green apple with PB2. I think PB2 is a great substitute for peanut butter but it really is best used in baking and flavoring things. I really did enjoy this little snack but come on’, there is NO replacement for the real stuff!!

Lunch: I made a veggie burger, topped it with a tablespoon of hummus and placed it on a bed of leftover quinoa from last nights dinner. This made for a filling meal that tasted really good, too!!

 While out on a quick shopping trip, I came across this amazing bag of granola.

Take a couple guesses as to what store I found this at? Go ahead……..

TJ MAXX!!!! Really?! I have heard so many wonderful things about this granola from other bloggers but had never had the chance to try it. I have never seen it at my local grocery stores but who needs those when you can shop for food at places like TJ Maxx…ha!!

Afternoon Snack: You better believe this made its way onto the top of some black cherry greek yogurt. Yum….I see what all the fuss is about!!

Dinner: Black bean and avocado quesadillas. This is a recycled photo but what the heck, it looks just like it always does. This has become an easy favorite in our house lately and I am all for it. Mmmmmmmm!!!

I can’t get out of here without thanking Jenn at Peas and Crayons for allowing me to be apart of another great week of WIAW!!!!
